CAJUN CUISINE RISES IN SUN CITY

Chef KT was born and raised in Los Angeles. After graduating from high school, he enlisted in the United States Navy where he served our country for 14 years. He achieved the rank of OS1/E6 (Operation Specialist First Class) and earned both his Surface and Air warfare pins.  In his last two years, he received permission to work in the galley onboard the USS San Antonio to learn culinary skills in preparation for culinary school after service. He was promoted to Galley Supervisor and was responsible for overseeing the daily operations of the galley while maintaining the highest standards required by the U.S. Navy. 

In 2010, Chef KT attended Le Cordon Bleu School of Culinary Arts in Los Angeles. He graduated in 2012 with an AOS in Culinary Arts and went on to start Two Squares Catering with a longtime friend. From there he decided to rebrand himself and created EaT 310 Catering with the slogan “Making Your Taste Buds Dance”.

 

In 2016, he moved to Menifee for “peace and quiet” and in 2019, Chef KT applied for a home-based food business certification via FoodNome and the Riverside County Health Department. EaT 310 Catering is a certified and legal home restaurant! Moreover, EaT 310 has had the pleasure of offering services for celebrity clientele and touring with notable musicians. He recently was hired by the Soboba Fire Chief to cater for the Riverside Fire Dispatchers.

I was super excited to experience Chef KT’s Cajun Cuisine. It is the only exclusively authentic Cajun-Creole food available in Menifee. He currently offers 4 signature dishes on the menu with prices ranging from $13 to $16 which changes seasonally. This is true and genuine home-cooking comfort food and when you read the options your mouth will start watering . . .

 

First up, Cajun Mac with Fried Chicken Strips, Cajun Mac & cheese with shrimp, crawfish and andouille chicken sausage served with three crispy buttermilk fried chicken strips. So, about the coating on the chicken, it is crispy and tastes delectable.

 

Turns out that he mastered the perfect balance through trial and error. His mother kept saying “Use your grandmother’s recipe” and Chef KT would say, “No, mine is better”. Eventually, mom had to admit that his was better. 

You simply have to try this dish; it’s beyond delicious. Roy's Shrimp Po'Boy, Cajun fried shrimp on a French roll with shredded lettuce, tomato, pickles and a Cajun Aioli Sauce atop which is to die for and it is a truly magnificent sandwich. 

Another wonder to behold is Da Crispy 951, crispy buttermilk fried chicken sandwich with lettuce, tomato and a Chipotle Ranch sauce & French fries. The secret of his success is his coatings and the sauces and each dish has its own special flair.

Last and certainly not least is the Pinkie Shrimp Etouffé, Cajun shrimp Etouffé served over white rice. This spicy Cajun stew is packed with flavor and actually did “make my taste buds dance”.
